Rice
is a great choice for the carbohydrate element of a meal.
It complements many foods and recipes, and is low in
calories. You'll find this grain an economical purchase.
Rice is pleasing to the eyes, mounded on a plate or
fluffed up in a bowl. There are a wide variety of rices
to choose from.WHITE RICE
This comes in a long grain that takes thirty
minutes to cook, or the more processed sort that cooks in
five minutes. Plain white rice works well with many
stir-fry recipes, as a base for casseroles, or side dish
for beans.
ARBORIO
RICE
A small, rounded white rice, this is the only
rice to use for rissottos.
BROWN
RICE
Popular choice of vegans, this old hippie staple
is a bit heavy. It is the rice highest in vitamins and
minerals, though. The long grain version is lighter than
the round grain version.
BASMATI
RICE
The goumet rice. A white, aged grain, this has a
shorter cooking time than other white rices, and is much
lighter and fluffier. Basmati is not very expensive if
you shop around. The best buy is the ten pound burlap
bag. Contrary to what the instructions say, use a ratio
of two cups of water to one cup of rice.
WILD
RICE
A bit over-rated, and definately over-priced, it
does have a pleasing nutty flavor, and can be a novel
addition to other rice dishes.
PERFECT RICE RECIPE
In a stainless steel medium sauce
pan, place:
1 cup basmati rice |
1 chicken or vegetable
boullion cube |
2 cups water |
1 pat butter |
Turn the flame high. When it comes to a boil,
place a tight lid on it, turn the flame down very low.
Cook 17 minutes. Fluff before serving.
